By panipopos
Following the tradition of English steamed puddings, Samoan puligi is a unique combination of coconut caramel and traditional holiday spices. It's texture is soft and springy and the crumb is moist.
When I was growing up, puligi was a real treat. Firstly, there were not many people who had the time to make it. Traditionally steamed, a large puligi could take up to four hours from start to finish. In addition, the puligi ingredients were not in everyone's cupboards in those days. Heavens knows how cinnamon, nutmeg and cloves ended up on the islands (I'm guessing, missionaries?), but looking over the ingredient list, nothing is native to Samoa except for coconut milk. These days, even though steamed puligi is still ideal, some people bake puligi to save time. As for the ingredients, well, if they're not already in your cupboards, they can be found in any local supermarket.
The puligi is done when you test the centre of it with a wooden skewer and the skewer comes out clean. Gently loosen the sides of the puligi with a knife, and turn it out immediately onto a wire rack to cool, with the right side up to prevent cracking.

mmm...puligi! i was fortunate to grow up eating this yummy delight, smothered in custard of course:) my uncle makes a 'to die for' puligi and yes, he does bake it.i had no idea that you're to steam it-another thing i like about your blog...it's very informative and i learn things about the why's and how's of samoan cooking, i love it! and, i think it's awesome that you made puligi from scratch and came up with your own recipe-wow! i wouldn't have the patience or tenacity. you're an inspiration:) enjoy your week!

I really love how you take the time to explain in your videos how to make everything from start to finish and they all look so yummy and delicious. But I was looking for your puligi recipe but couldn't find it. You might have removed it already. Will it be possible to email it to me at owenslu@uvu.edu, if you don't mind, please. I've been looking for a puligi recipe for forever. Keep up what you're doing for the benefit of our Samoan people, especially us who were born and grew up else where and away from the islands. ReplyDeletefor the custard, it's just custard powder, milk and sugar...if you can't get custard powder, then just make custard from scratch with eggs...there are loads of recipes for this online...good luck!

Your recipe on puligi came out perfect and with the custard sauce it was divine. ReplyDeleteI love pulingi!! Your recipe is the only one that I have seen that uses the caramel sugar in the cake (just like my grandmother did it). Wonderful! My grandmother always put raisins in it so I added them. I have one of those silicone bundt cake forms, so I tried it in the microwave. It came out springy and moist and only took 11 minutes! Gone are the days where you have to pour it into a cotton dishcloth and boil it forever. Thank you again for your recipe. I always knew what went into it, but never knew the measurements. Oh, my mouth is so happy now!

DeleteHi there, I love your site, Im a Palagi and my Husband is Samoan, we go to his familys house alot and i love to make things from your site to take along. they all love it, one weekend they had their mum come over from Samoa, and i made your puligi pudding. and i couldnt understand a word she said, but she ended up eating like 3 or 4 pieces of it, so i guess that meant that she liked it and that i must have done something wright. Thank you so much, becuase of you i dont feel left out in the kitchen when it comes to our sunday samoan family lunches.

Puligi is one of my favorites. I actually had an uncle that we used to call the puligi man because he used to make the bomb puligis ....so yummy. Well then for years we didnt know of who else made puligi as good as his, btw it was baked.
ReplyDeleteWell I moved to the states and conected with an aunt of mine. This woman told me that she makes puligi! When I tasted it I thought I died and went to heaven lol. Her recipe is boiled...yes boiled. It was amazingly, wonderfuly moist.
Couple years later another one of my aunts made some puligi and this one was steamed. My gosh ...it melted it melted in my mouth. Three different recipes and they are all delicious.
Baked, boiled and steamed...your descriptionz just made my mouth water...puligi...50 shades of puligi. Ka fefe!

ReplyDeleteYour recipe is the best I make puligi for the first time when my oldest turned 8months she’s now 6years old haha my husband and my in laws loved it! And I made it when we had guests over and they asked for the recipe even my mother in law asked for the recipe! I haven’t make puligi for almost 4 years I’m just lazy haha!!
